Massaged Kale Salad
When I claim that Massaged Kale Salad is my favorite food, I’m often met with funny looks, but this salad is so full of garlicky deliciousness that it’s hard not to love! This salad is my go-to recipe for everything from potlucks to weeknight dinners. It’s a real crowd pleaser.
What you’ll need:
2 bunches of kale, large stems removed, and leaves chopped (or torn) into small pieces.
The juice of 1 lemon
3 garlic cloves (minced or pureed)
1 TBSP Bragg’s Liquid Aminos
1/3 cup olive oil
1/2 cup of grated parmesan cheese or nutritional yeast
salt & pepper
De-stem and chopped kale into small, bite sized pieces. Put kale into a large mixing bowl and set aside.
Combine all remaining ingredients in a small bowl.
Pour your dressing over your kale and massage. Squeeze and roll the kale with your hands. Continue this process for 1-2 minutes, until your kale has reduced in size by about half.
You’ll notice that the kale is darker, shinier, and softer. The process of massaging the kale breaks down it’s outer cell structure making it softer and less bitter.
How cool is that?
After that, let it sit in the fridge for about 20 minutes, and then serve and enjoy!
